Shepherdβs Pie Recipe
Shepherdβs Pie is a comforting, classic dish that layers savory ground meat and vegetables under a fluffy mashed potato topping. Traditionally made with lamb, it can also be made with beef for a variation sometimes called Cottage Pie. This dish is perfect for family dinners, cold nights, or any time you crave a warm, hearty meal.
Ingredients
-
1 lb (450 g) ground lamb or beef
-
1 medium onion, finely chopped
-
2 cloves garlic, minced
-
2 medium carrots, peeled and diced
-
1 cup frozen peas
-
2 tablespoons tomato paste
-
1 tablespoon Worcestershire sauce
-
1 cup beef or vegetable broth
-
2 tablespoons all-purpose flour
-
2 tablespoons olive oil or butter
-
Salt and black pepper to taste
-
Β½ teaspoon dried thyme
-
Β½ teaspoon dried rosemary
Mashed Potato Topping:
-
2 lbs (900 g) potatoes, peeled and chopped
-
ΒΌ cup milk (or plant-based milk)
-
3 tablespoons butter (or vegan alternative)
-
Salt and black pepper to taste
-
Optional: ΒΌ cup shredded cheddar cheese
Step 1: Prepare the Mashed Potatoes
Place chopped potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil over medium-high heat. Cook until potatoes are tender, about 15β20 minutes. Drain and return to the pot. Mash with butter, milk, salt, and pepper until smooth and creamy. Set aside.
Step 2: Cook the Meat Filling
While the potatoes cook, heat olive oil or butter in a large skillet over medium heat. Add onions and sautΓ© for 3β4 minutes until soft. Add garlic, carrots, and cook for another 2β3 minutes.
Add the ground lamb (or beef) to the pan. Cook, breaking it up with a spatula, until browned and cooked through. Drain any excess fat if necessary.
Step 3: Add Flavor and Thicken
Stir in tomato paste, Worcestershire sauce, thyme, rosemary, salt, and black pepper. Sprinkle flour over the meat mixture and stir well to combine. Gradually add the broth, stirring constantly, until the mixture thickens into a hearty, gravy-like consistency. Fold in frozen peas and cook for another 2 minutes. Remove from heat.
Step 4: Assemble the Shepherdβs Pie
Preheat your oven to 400Β°F (200Β°C). Transfer the meat and vegetable mixture into a greased 9Γ13-inch baking dish. Spread it evenly across the bottom.
Top with the mashed potatoes, spreading gently with a spatula. If desired, sprinkle shredded cheddar cheese over the top for a golden, melty finish. For a decorative touch, use a fork to create ridges in the mashed potatoes.
Step 5: Bake
Place the baking dish in the preheated oven and bake for 20β25 minutes, or until the top is slightly golden and the filling is bubbling around the edges. For extra browning, you can broil for 1β2 minutes at the end, watching carefully to prevent burning.
Step 6: Rest and Serve
Remove the Shepherdβs Pie from the oven and let it rest for 5 minutes before serving. This allows the flavors to settle and makes slicing easier.
Tips and Variations
-
Substitute ground turkey or chicken for a lighter version.
-
Add other vegetables like corn, green beans, or mushrooms for variety.
-
For creamier mashed potatoes, add a bit of sour cream or cream cheese.
-
Make ahead: prepare the meat filling and mashed potatoes separately, assemble, and refrigerate. Bake when ready to serve.
