Creamy Garlic Butter Salmon with Spinach & Mushrooms

For the Sauce

Instructions
1. Season & Sear the Salmon
Pat the salmon dry with paper towels and season both sides with salt, pepper, and paprika.
Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Place salmon fillets in the pan (skin-side down if using skin). Sear for 4–5 minutes per side until golden and just cooked through. Remove salmon from the pan and set aside.
2. Cook the Mushrooms
In the same skillet, melt 2 tablespoons butter. Add sliced mushrooms and cook for 4–5 minutes until softened and lightly browned. Season lightly with salt and pepper.
3. Add Garlic
Stir in minced garlic and cook for 30 seconds until fragrant. Be careful not to burn the garlic.
4. Make the Creamy Sauce
Pour in chicken broth and simmer for 2 minutes, scraping up any flavorful bits from the pan. Add heavy cream, Italian seasoning, and Parmesan cheese. Stir and let the sauce simmer gently for 3–4 minutes until slightly thickened.
