Cherry Delight is a luscious layered dessert that combines a buttery crust, creamy filling, and sweet-tart cherry topping. It’s easy to make, no-bake for the filling, and perfect for gatherings, potlucks, or a simple treat at home. This dessert balances textures—crunchy, creamy, and juicy—making every bite irresistible.
Ingredients
For the Crust
-
1½ cups graham cracker crumbs (or digestive biscuits)
-
½ cup unsalted butter, melted
-
2 tablespoons granulated sugar
For the Cream Layer
-
1 (8 oz / 225 g) cream cheese, softened
-
1 cup whipped topping (whipped cream or Cool Whip)
-
½ cup powdered sugar
-
1 teaspoon vanilla extract
For the Cherry Topping
-
1 (21 oz / 595 g) can cherry pie filling (or fresh/sweetened cherries)
-
Optional: 1 teaspoon cornstarch if using fresh cherries for thickening
Optional Garnish
-
Chocolate shavings, almond slices, or extra whipped cream
Instructions
1. Prepare the Crust
-
Preheat the oven to 350°F (175°C) if you want a slightly firmer base (optional—can also be no-bake).
-
In a bowl, combine graham cracker crumbs, melted butter, and sugar.
-
Press mixture firmly into the bottom of a 9×13-inch baking pan to form an even layer.
-
Bake for 8–10 minutes until lightly golden if baking; otherwise, chill in the fridge for 30 minutes to set.
2. Make the Cream Layer
-
In a medium bowl, beat softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
-
Gently fold in whipped topping until fully incorporated.
-
Spread the cream mixture evenly over the prepared crust.
3. Add Cherry Topping
-
Spoon cherry pie filling over the cream layer. Spread gently to cover completely.
-
If using fresh cherries, cook them lightly with sugar and cornstarch until slightly thickened, then cool before adding.
4. Chill
Refrigerate the assembled dessert for at least 2–3 hours before serving. This allows the layers to set and flavors to meld.
Tips for the Perfect Cherry Delight
-
Use room-temperature cream cheese for a smooth, lump-free cream layer.
-
For extra crunch, sprinkle chopped nuts or chocolate chips between layers.
-
Fresh cherries can be used but require a light glaze to prevent watery topping.
-
Slice with a sharp knife dipped in hot water for clean cuts.
Serving Suggestions
-
Serve chilled, straight from the refrigerator.
-
Garnish with whipped cream, chocolate shavings, or toasted almonds for a beautiful presentation.
-
Pairs well with coffee, tea, or a glass of cold milk.
Storage
-
Store in an airtight container in the refrigerator for up to 4–5 days.
-
Can also be made a day ahead, which allows the flavors to develop further.
