Fried Cabbage with Bacon
Fried cabbage with bacon is a simple, Southern-inspired dish that combines tender, slightly caramelized cabbage with smoky, crispy bacon. The natural sweetness of the cabbage pairs perfectly with the savory richness of bacon, garlic, and a touch of onion. It’s quick, comforting, and packed with flavor.
Ingredients
-
1 medium head green cabbage, chopped or shredded (about 6–8 cups)
-
6–8 slices bacon, chopped
-
1 medium onion, finely chopped
-
2–3 cloves garlic, minced
-
Salt and black pepper, to taste
-
½ teaspoon crushed red pepper flakes (optional for a bit of heat)
-
1–2 tablespoons apple cider vinegar or white vinegar (optional, for tang)
-
Fresh parsley, chopped, for garnish (optional)
Instructions
1. Cook the Bacon
-
In a large skillet or sauté pan, cook chopped bacon over medium heat until crispy.
-
Remove bacon with a slotted spoon and drain on paper towels, leaving the rendered bacon fat in the pan.
2. Sauté Onions and Garlic
-
Add chopped onion to the bacon fat and sauté for 3–4 minutes until translucent and fragrant.
-
Add minced garlic and cook for another 30–60 seconds, careful not to burn it.
3. Cook the Cabbage
-
Add chopped cabbage to the pan in batches if necessary.
-
Stir well to coat with bacon fat and aromatics.
-
Cook over medium heat for 8–12 minutes, stirring occasionally, until cabbage is tender and slightly caramelized.
4. Season and Finish
-
Return cooked bacon to the pan.
-
Season with salt, black pepper, and crushed red pepper flakes if using.
-
Add a splash of vinegar (optional) to enhance flavor and balance richness.
-
Toss everything together and cook for another 1–2 minutes.
5. Serve
Transfer to a serving dish and garnish with fresh parsley if desired. Serve hot as a side dish or even as a main with cornbread or mashed potatoes.
Tips for Best Results
-
Use sturdy cabbage, not overly soft, for the best texture.
-
Cooking slowly over medium heat allows natural sugars in the cabbage to caramelize.
-
Bacon fat is key—don’t replace it entirely with oil, as it adds signature flavor.
-
For extra depth, add a pinch of smoked paprika or a splash of Worcestershire sauce.
Variations
-
Spicy Version: Add chopped jalapeño or red pepper flakes.
-
Healthy Twist: Use turkey bacon or skip the bacon for a vegetarian-friendly version; add a drizzle of olive oil.
-
With Sausage: Substitute half the bacon with sliced smoked sausage for a heartier dish.
Storage
-
Store leftovers in an airtight container in the refrigerator for up to 3 days.
-
Reheat gently on the stovetop to retain texture; avoid microwaving too long to prevent sogginess.
