Classic Warm Chocolate Fudge Brownies
Few things cure a sweet craving better than rich, chocolatey brownies. These classic warm chocolate fudge brownies have a crackly top, a soft center, and deep cocoa flavor. They’re perfect on their own or served warm with a scoop of vanilla ice cream.
Ingredients
-
½ cup (115 g) unsalted butter
-
1 cup (200 g) granulated sugar
-
2 large eggs, at room temperature
-
1 teaspoon vanilla extract
-
⅓ cup (40 g) unsweetened cocoa powder
-
½ cup (65 g) all-purpose flour
-
¼ teaspoon salt
-
¼ teaspoon baking powder
-
½ cup (90 g) chocolate chips or chunks (optional)
Instructions
1. Prepare the oven and pan
Preheat your oven to 175°C (350°F). Line an 8×8-inch baking pan with parchment paper or lightly grease it with butter. This helps prevent sticking and makes removing the brownies easier once baked.
2. Melt the butter
In a small saucepan over low heat, melt the butter gently. Remove from heat as soon as it’s melted; you don’t want it to brown. Let it cool slightly for 2–3 minutes so it doesn’t scramble the eggs later.
3. Mix sugar and butter
Pour the melted butter into a mixing bowl. Add the sugar and whisk well until the mixture looks glossy and slightly thick. This step helps create that classic shiny brownie top.
4. Add eggs and vanilla
Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract. The batter should look smooth and creamy at this stage.
5. Combine dry ingredients
In a separate bowl, sift together cocoa powder, flour, salt, and baking powder. Sifting removes lumps and ensures even distribution of the cocoa.
6. Make the batter
Gradually fold the dry ingredients into the wet mixture using a spatula. Mix gently just until combined. Do not overmix, as this can make the brownies dense instead of fudgy. If using chocolate chips, fold them in now.
7. Bake
Pour the batter into the prepared pan and smooth the top. Bake for 20–25 minutes. The brownies are done when a toothpick inserted in the center comes out with a few moist crumbs, not wet batter.
8. Cool slightly and serve
Allow the brownies to cool in the pan for at least 15 minutes. Slice and serve warm or at room temperature.

Tips for Perfect Brownies
-
Fudgy brownies: Slightly underbake them. They will firm up as they cool.
-
Cakey brownies: Add an extra 2 tablespoons of flour and bake a few minutes longer.
-
Flavor boost: Add a pinch of instant coffee or espresso powder to enhance the chocolate flavor without tasting like coffee.
Storage
Store brownies in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. They can also be frozen for up to 2 months—just warm them slightly before serving.
