Freshly Baked Sausage Rolls
Nothing beats the smell of freshly baked sausage rolls coming out of the oven. With crisp, buttery puff pastry and a juicy, well-seasoned sausage filling, these classic rolls are comfort food at its best. They’re simple to make and always a crowd favorite.
Ingredients

500 g sausage meat or minced chicken/beef

1 small onion, very finely chopped

1 tablespoon soy sauce or Worcestershire sauce

2 sheets puff pastry, thawed

Instructions
1. Prepare the filling
In a mixing bowl, combine the sausage meat, finely chopped onion, garlic, salt, black pepper, paprika, thyme, and soy or Worcestershire sauce. Mix well until fully combined. The mixture should be moist but firm.
2. Prepare the pastry
Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper. Lightly flour your work surface and roll out the puff pastry sheets if needed.
3. Assemble the rolls
Cut each puff pastry sheet in half lengthwise to form long rectangles. Spoon a line of the sausage filling down the center of each pastry strip. Brush one edge with beaten egg, then roll the pastry over the filling to form a log, sealing the edge underneath.
4. Slice and glaze
Cut each log into equal pieces (about 4–5 cm long). Place them seam-side down on the prepared tray. Brush the tops with egg wash and sprinkle with sesame or nigella seeds if using.
5. Bake
Bake in the preheated oven for 20–25 minutes, or until the pastry is puffed, golden brown, and crisp, and the filling is fully cooked.
6. Cool slightly and serve
Remove from the oven and allow the sausage rolls to cool for a few minutes before serving. This helps the filling set and makes them easier to handle.
Serving Suggestions
Serve sausage rolls warm with ketchup, mustard, chili sauce, or a simple yogurt dip. They pair wonderfully with tea, coffee, or as part of a snack platter.
