Part 1: Crispy Fried Chicken

Instructions
Step 1: Marinate the Chicken
In a bowl, mix buttermilk (or yogurt), egg, salt, and black pepper. Add the chicken pieces and coat well. Cover and refrigerate for at least 1 hour (overnight is best). This keeps the chicken juicy and tender.
Step 2: Prepare the Coating
In a separate bowl, combine flour, paprika, garlic powder, onion powder, chili powder, salt, and pepper. Mix well.
Step 3: Coat the Chicken
Remove chicken from the marinade and let excess drip off. Dredge each piece in the seasoned flour, pressing firmly so the coating sticks well.
Step 4: Fry the Chicken
Heat oil in a deep pan over medium heat (about 170–180°C / 340–360°F). Carefully place chicken pieces into the hot oil. Do not overcrowd the pan.
Fry for 12–15 minutes, turning occasionally, until golden brown and cooked through. The internal temperature should reach 75°C (165°F).
Step 5: Drain
Remove chicken and place on paper towels to drain excess oil. Let rest for a few minutes before serving.

Instructions
Step 1: Prepare the Potatoes
Peel the potatoes and cut them into thin sticks. Rinse under cold water to remove excess starch.
Step 2: Soak the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes. This helps make the fries crispy.
Step 3: First Fry (Blanching)
Drain and pat dry the potatoes. Fry them in oil at medium heat (150–160°C / 300–320°F) for 4–5 minutes until soft but not browned. Remove and let cool.
Step 4: Second Fry
Increase oil temperature to high (180°C / 360°F). Fry the potatoes again for 3–5 minutes until golden and crispy.
Step 5: Season
Remove fries from oil, drain on paper towels, and sprinkle with salt while hot.
