Baking Baguettes (Classic French Bread)
Baguettes are long, thin loaves of French bread known for their crisp, golden crust and soft, airy interior. While they look simple, a good baguette relies on proper dough hydration, fermentation, and steam during baking. With a few basic ingredients and the right technique, you can bake bakery-style baguettes at home.

4 cups all-purpose or bread flour

1 1/2 teaspoons salt

1 teaspoon sugar or honey (optional, helps yeast)

2 teaspoons instant dry yeast

1 1/2 cups warm water (about 40°C / 105°F)

Instructions
1. Prepare the Dough
In a large bowl, mix flour, salt, sugar, and yeast. Gradually add warm water and mix until a sticky dough forms. Add olive oil if using. Turn the dough onto a lightly floured surface and knead for 8–10 minutes until smooth and elastic.
2. First Rise (Fermentation)
Place the dough in a lightly oiled bowl, cover with plastic wrap or a damp cloth, and let it rise in a warm place for 1–1½ hours, or until doubled in size.
3. Shape the Baguettes
Punch down the dough gently and divide it into 2 or 3 equal portions. Shape each portion into a long, thin loaf by rolling and stretching gently. Place the loaves on a parchment-lined baking tray or baguette pan.
4. Second Rise
Cover the shaped loaves loosely and let them rise again for 30–40 minutes. The dough should look puffy but not over-risen.
5. Score the Dough
Using a sharp knife or blade, make 3–4 diagonal slashes on top of each baguette. This helps control expansion during baking and gives the classic look.
6. Create Steam
Preheat the oven to 230°C (450°F). Place an empty metal tray on the bottom rack. Just before baking, pour hot water into the tray to create steam—this is essential for a crispy crust.
7. Bake
Bake the baguettes for 20–25 minutes until deep golden brown. The bread should sound hollow when tapped on the bottom.
8. Cool
Transfer to a wire rack and cool for at least 20 minutes before slicing. This allows the crumb to set properly.
