Classic Country Breakfast: Ham, Eggs, Fried Taters with Onions & Toast
Nothing beats a traditional country-style breakfast when you want something filling, comforting, and full of flavor. Ingredients
For the fried taters:

Instructions
1. Prepare the Potatoes
Wash the potatoes well. Cut them into small cubes or thin slices so they cook evenly. Place them in a bowl of cold water for 10 minutes to remove excess starch. Drain and pat them completely dry with a kitchen towel—this step helps them get crispy.
2. Fry the Taters and Onions
Heat oil or butter in a large skillet over medium heat. Add the potatoes in an even layer. Let them cook undisturbed for 4–5 minutes so they form a golden crust. Stir gently and continue cooking.
Once the potatoes begin to soften, add the sliced onions. Season with salt, black pepper, paprika, and garlic powder if using. Cook for another 8–10 minutes, stirring occasionally, until the potatoes are crispy on the outside and tender inside, and the onions are soft and slightly caramelized. Lower the heat if needed to prevent burning. Remove from heat and cover to keep warm.
3. Cook the Ham
In a separate skillet, heat a small amount of oil or butter over medium heat. Add the ham slices and cook for about 1–2 minutes per side until heated through and lightly browned. Ham cooks quickly, so avoid overcooking or it may become dry. Set aside.
4. Cook the Eggs
Using the same pan or a clean one, melt butter over medium-low heat. Crack the eggs carefully into the pan. Cook them to your liking:

5. Toast the Bread
Toast the bread slices until golden and crisp. Spread butter on the warm toast so it melts evenly.
Serving the Breakfast
Arrange the fried taters with onions on a plate, add a slice or two of ham, and place the eggs alongside. Serve with buttered toast on the side. For extra flavor, you can add ketchup, hot sauce, or a spoon of gravy over the potatoes.
