Classic Beef Liver & Onions Recipe
Beef liver and onions is a timeless comfort dish known for its rich flavor and impressive nutritional value. When cooked properly, beef liver is tender and mild, not bitter or tough. Paired with sweet, caramelized onions, this dish is hearty, satisfying, and surprisingly simple to prepare.
Ingredients (Serves 2–3)
-
500 g (1 lb) beef liver
-
2 large onions, thinly sliced
-
½ cup milk (for soaking)
-
½ cup all-purpose flour
-
1 teaspoon salt
-
½ teaspoon black pepper
-
½ teaspoon paprika
-
2–3 tablespoons oil or butter
-
Optional: 1 teaspoon garlic powder or minced garlic
Instructions
Step 1: Prepare the Liver
Rinse the beef liver under cold water and pat dry. Remove any visible membranes or veins. Slice the liver into thin pieces, about ¼-inch thick. Place the slices in a bowl and cover with milk. Soak for 30–60 minutes to reduce bitterness. Drain and pat dry before cooking.
Step 2: Prepare the Onions
Heat 1 tablespoon of oil or butter in a large skillet over medium heat. Add the sliced onions and cook slowly, stirring occasionally, until soft and golden brown—about 15–20 minutes. Remove onions from the pan and set aside.
Step 3: Season and Coat the Liver
In a shallow dish, mix flour, salt, black pepper, paprika, and garlic powder (if using). Lightly coat each liver slice in the seasoned flour, shaking off excess.
Step 4: Cook the Liver
In the same skillet, add remaining oil or butter and heat over medium-high heat. Place liver slices in a single layer. Cook for 2–3 minutes per side until browned on the outside but still slightly pink inside. Do not overcook, as liver becomes tough.
Step 5: Combine and Finish
Return the onions to the skillet, gently mixing them with the liver. Cook for another 1–2 minutes to blend flavors. Taste and adjust seasoning if needed.
Serving Suggestions
Serve beef liver and onions hot with mashed potatoes, rice, or buttered bread. Steamed vegetables or a simple green salad make excellent side dishes.
