Ingredients
For the salad:
-
3 cups cooked rotini or penne pasta (cooled)
-
1 cup canned black beans (rinsed and drained)
-
1 cup canned sweet corn (drained)
-
1 cup cherry tomatoes (halved)
-
1/2 cup red bell pepper (diced)
-
1/2 cup green bell pepper (diced)
-
1/3 cup red onion (finely chopped)
-
1 cup cheddar cheese (cubed or shredded)
-
1/2 cup cooked beef bacon or turkey bacon (optional, chopped)
-
2 tablespoons fresh parsley or coriander (chopped)
For the cowboy dressing:
-
1/2 cup mayonnaise
-
2 tablespoons BBQ sauce
-
1 tablespoon mustard
-
1 tablespoon apple cider vinegar or lemon juice
-
1 teaspoon smoked paprika
-
1/2 teaspoon garlic powder
-
1/2 teaspoon black pepper
-
Salt to taste
-
2–3 tablespoons milk (to adjust consistency)
Instructions
-
Cook the Pasta
Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Let the pasta cool completely before assembling the salad. -
Prepare the Vegetables
While the pasta cools, chop all vegetables evenly to ensure balanced flavor in every bite. Rinse and drain the black beans and corn thoroughly to remove excess salt. -
Make the Dressing
In a medium bowl, whisk together mayonnaise, BBQ sauce, mustard, vinegar or lemon juice, smoked paprika, garlic powder, black pepper, and salt. Add milk slowly until the dressing is creamy but pourable. Taste and adjust seasoning if needed. -
Assemble the Salad
In a large mixing bowl, combine the cooked pasta, black beans, corn, tomatoes, bell peppers, red onion, cheese, and bacon (if using). Pour the dressing over the salad and gently toss until everything is well coated. -
Chill and Serve
Cover the bowl and refrigerate for at least 30–60 minutes before serving. Chilling allows the flavors to blend beautifully. Garnish with fresh parsley or coriander just before serving.
