Cracker Barrel–Style Chicken and Dumplings
Few dishes feel as comforting and nostalgic as Cracker Barrel’s chicken and dumplings. This homestyle recipe recreates that slow-cooked flavor with simple ingredients and old-fashioned technique. The key is a flavorful broth, gently simmered chicken, and soft, rolled dumplings that soak up all that goodness.
Ingredients
For the Chicken
-
1 whole chicken (about 3–4 lb), cut into pieces
or 2 lb bone-in chicken thighs and breasts -
8 cups water
-
1 teaspoon salt (adjust to taste)
-
½ teaspoon black pepper
-
1 teaspoon poultry seasoning (optional but authentic)
For the Dumplings
-
2 cups all-purpose flour
-
½ teaspoon baking powder
-
1 teaspoon salt
-
2 tablespoons butter, softened
-
¾ cup whole milk (plus more if needed)
For Finishing
-
2 tablespoons butter
-
Extra salt and pepper, to taste
Instructions
Step 1: Cook the Chicken
Place the chicken pieces in a large pot or Dutch oven. Add the water, salt, pepper, and poultry seasoning. Bring to a gentle boil, then reduce the heat to low. Cover and simmer for about 45–60 minutes, or until the chicken is very tender and cooked through.
Once cooked, carefully remove the chicken from the pot and set it aside to cool slightly. Keep the broth simmering on very low heat.
Step 2: Shred the Chicken
When the chicken is cool enough to handle, remove and discard the skin and bones. Shred the meat into bite-size pieces using your hands or two forks. Set aside.
Step 3: Make the Dumpling Dough
In a mixing bowl, combine the flour, baking powder, and salt. Cut in the softened butter using your fingers until the mixture looks crumbly. Slowly add the milk, stirring just until a soft dough forms. Do not overmix—this keeps the dumplings tender.
Turn the dough out onto a lightly floured surface. Roll it out to about ⅛-inch thickness, just like Cracker Barrel’s flat-style dumplings. Cut into strips or squares, about 1 x 2 inches.
Step 4: Cook the Dumplings
Bring the broth back to a gentle simmer (not a rolling boil). Drop the dumplings in one at a time, stirring gently so they don’t stick together. Cover and simmer for 15–20 minutes, stirring occasionally. The dumplings will soften and thicken the broth naturally.
Step 5: Combine and Finish
Add the shredded chicken back into the pot. Stir in the butter and let everything simmer uncovered for another 5–10 minutes, until the broth is thick, creamy, and comforting. Taste and adjust seasoning with more salt and pepper if needed.
