Ingredients
For the Beets:

Instructions
1. Prepare the Beets

Wash the beets thoroughly to remove dirt.

Boil in a large pot of water with 1 tablespoon salt for 25–35 minutes, or until tender when pierced with a fork.

Drain and let cool slightly. Peel the skins off (they should slip off easily with your fingers or a knife).

Slice the beets into rounds, wedges, or cubes depending on your preference.
2. Make the Pickling Brine

In a medium saucepan, combine vinegar, water, sugar, salt, and optional spices.

Bring to a gentle boil over medium heat, stirring until sugar dissolves. Remove from heat.
3. Pack the Jars

Place the sliced beets into sterilized jars.

Pour the hot pickling brine over the beets, ensuring they are fully submerged. Leave about 1/2 inch of headspace at the top.

Tap the jars gently to remove air bubbles, and seal with lids.
4. Cool and Store
