Ingredients
For the pizza base
-
4 flour tortillas (medium size)
-
Oil for frying (or use an air fryer)
For the seasoned beef
-
250 g (½ lb) ground beef
-
1 small onion, finely chopped
-
1 teaspoon chili powder
-
1 teaspoon cumin powder
-
½ teaspoon paprika
-
½ teaspoon garlic powder
-
½ teaspoon onion powder
-
Salt and black pepper to taste
-
2 tablespoons water
For layers and toppings
-
1 cup refried beans
-
1½ cups shredded mozzarella or Mexican blend cheese
-
½ cup taco sauce or mild salsa
-
1 small tomato, finely diced
-
2 tablespoons sliced black olives
-
2 tablespoons chopped green onions
Instructions
Step 1: Prepare the Tortillas
Heat oil in a pan over medium heat. Fry the tortillas one at a time until golden and crispy on both sides. Remove and place them on paper towels to drain excess oil. If you prefer a lighter option, you can air-fry or bake them at 200°C (400°F) until crisp.
Step 2: Cook the Beef
In a skillet, cook the ground beef over medium heat until browned. Add the chopped onion and cook until soft. Drain excess fat if needed. Add chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Pour in 2 tablespoons of water and simmer for 3–4 minutes until the beef is well seasoned and slightly saucy. Remove from heat.
Step 3: Warm the Beans
Heat the refried beans in a small saucepan or microwave until warm and spreadable. Stir well to remove lumps.
Step 4: Assemble the Pizza
Preheat your oven to 190°C (375°F). Place one crispy tortilla on a baking tray. Spread a thin layer of refried beans over it, followed by a layer of seasoned beef. Place another tortilla on top, gently pressing it down.
Spread taco sauce evenly over the top tortilla. Sprinkle generously with shredded cheese, making sure it covers the surface evenly.
Step 5: Bake
Place the assembled pizza in the oven and bake for 8–10 minutes, or until the cheese is fully melted and bubbly. Keep an eye on it so the edges don’t burn.
Step 6: Add Fresh Toppings
Remove from the oven and immediately add diced tomatoes, black olives, and green onions on top. Let it cool for 1–2 minutes before slicing.
Serving Suggestions
Slice the Mexican Pizza into quarters and serve hot. It pairs perfectly with sour cream, guacamole, or extra taco sauce on the side. You can also add jalapeños if you like heat.
